Just sitting here listening to some fabulous italo disco, drinking mojitos with my love and decided I had to share.

granulated sugar for dipping
1 lime per drink
handuful mint leaves
2 glassfuls ice
4 measures rum
soda water

Take two cocktail glasses dip rims in water then into sugar. With a pestal and mortar gently blend some sugar with the juice of a lime and the mint leaves, until it becomes almost syrupy.

Crush some ice with a rolling pin or wooden pepper mill (something long and sturdy in any case!), then tip the ice with the sugar mint mix into the glasses. Add two measures of white rum to each and top up with soda water.

As the final touch, cut up the remaining lime and add as garnish.
