heavenly chocolate spiced rum cookies aka eggless cookies

Before I met Emmms I always made my cookies with a traditional egg recipe and was never truly satisfied with the results. They just didnt seem to cut it, however since being friends with the eggless wonder I am now baking cookies that are fab and veggie friendly! Try this recipe for some indulgent chocolatey treats!

ingredients:

4oz sugar

4oz butter

4oz flour

1 tblsp toasted sesame seed oil

25ml shot of spiced rum

1 tsp vanilla essence

1.5 tblsp cocoa powder

1tsp baking powder

A handful of chopped dried apricots


method:


Cream together the butter and sugar until soft, sieve in the flour, baking powder and cocoa powder and mix well together. Incorporate the dried apricots.

Now add the shot of rum and the sesame seed oil and get you hands into the bowl. Great fun the best way to mix your ingredients together! You want to get an ever so slightly sticky but not wet ball of dough (you should be able to manipulate it without it sticking to your hands).

Now split this dough into 8-10 balls and place well apart on a baking tray. Bake at gas 6/200 degrees celsius for roughly 10 mins. Leave to cool or as long as you can manage!


Enjoy with a lovely cup of coffee/tea/baileys/rum and coke!
