Well, the sun is out so it is official to me!

Why is it that the days you plan to do nothing at all always turn out to be the most productive days! I really need to start listening to myself and not driving myself crazy making lists and plans of what to do!

This weekend was one of those weekends. Me and my love had planned to go away but it just never happened so to make up for it we decided to have a weekend of doing nothing. This suddenly became a weekend of me making fabulous cakes and getting stuck into the garden and my love getting on with promoting her website!

Mini Cranberry Cakes!

For the cake:

4oz sugar

4oz butter

4oz sr flour

2 eggs

1 tsp vanilla extract

generous handfull of dried cranberries (the ones I used were coated in cinnamon which gave them a real kick!)

70g white chocolate roughly chopped

for the icing:

3oz butter

60z icing sugar

1 25ml shot of  triple sec

Recipe:

Blend the butter and sugar together in a bowl until soft, add the vanilla extract then add the eggs a bit at a time and beat until light and fluffy. Now sift in the flour and fold in the cranberries and chocolate. Mix gently until incorporated.

Now spoon into individual cases and bake at gas make 6/200 oc  for approx 10 mins until golden brown.

Allow to cool on a rack. Try to control yourself!!!!

Make up the icing. Blend together the ingredients until you get a soft light icing. Once the cakes are cooled spoon on the icing sugar and top with a cranberry!!!!!
